White Soup–more difficult than you’d think

1811 Recipe by John Farley for White Soup 1 package of beef shank 2.5 pounds chicken 1/2 pound bacon, chopped 1/4 pound rice 2 anchovy fillets 5-6 peppercorns A handful of minced fresh basil and thyme 1 large onion, diced 2 bunches of celery, chopped 3 quarts of water

White soup was a favorite dish at balls. Expensive and complex to make, it quietly demonstrated the wealth and refinement of the ball’s host–assuming nothing went wrong in the process.
